EET Superstar Vicki Shares Simple Recipes for Weight Loss

Vicki always says she loves The EET Fitness Plan, and she tells lots of people (including several new EETers!) about how fun EETing can be.

Well EET loves Vicki too!

Not only has she lost all the weight she set out to lose as we told you in this post

Vicki Drops Atkins for EET – goes from 115 to 105 (Lost LAST 10 lbs) in 60 Days!

But she has done it with style eating out regularly at all her favorite restaurants as well as enjoying her favorite “totties” when she likes.

So Vicki is a true EET Role Model, but she’s not done yet!

Vicki was nice enough to send along some of her favorite recipes for those “non treat meal” times when most people are eating grilled chicken breast, broccoli and a low carb tortilla yet again.

A little variety outside of treat meals can make ALL the difference for some EETers.  These simple recipes could truly help someone become an EET success story!

Give these a try – I know we are going to here at the EET household –they look GREAT!

Turkey Lettuce Wraps

1 lb Ground Turkey breast

1/2 cup onion

several sprigs of fresh cilantro or dried cilantro

1/2 cup red and green bell pepper

dash of garlic powder

1/2 teaspoon salt and pepper

Brown all the above ingredients in small amount of Olive Oil in Skillet

Add after meat and veggies done add in

1/2 package Mild Taco Seasoning

1/4 cup water

Let simmer about 10 to 15 minutes to thicken

Prepare your large lettuce leaves on a platter and then fill with meat filling!

UMMM GOOD and I always like to use these at my 3PM or 6PM meal.



1 lb Ground Turkey Breast

1/2 cup diced onion

1/2 cup diced Green Bell Pepper

1/2 teaspoon garlic powder

1 egg

5 Multi grain saltine crackers crumbled up

1/2 small can of tomato sauce

Mix all ingredients in mixing bowl then transfer to your oven safe

meat loaf dish.

Form your meat loaf I do mine oblong shape or you could do meat balls

Then on top pour the last 1/2 of your tomato sauce and add one or

2 slices of Turkey bacon to finish off

BAKE at 350 degrees for 1 hour

I eat this with Green beans or Green sweet peas.



4 Red or Green or both Bell Peppers cut in 1/2 and seeded out

1 lb Turkey Breast

1/2 cup diced onion

1/2 cup green and red bell pepper

1/2 teaspoon garlic powder

1 egg

4 multi grain saltine crackers crumbled up

1/2 small tomato sauce

salt and pepper

Put your Bell Pepper halves in a baking dish

Mix all the above ingredients in a mixing bowl and then stuff

the peppers with the mixture.  On top of the stuffed peppers

pour the remaining 1/2 can tomato sauce and slightly salt and

pepper once more.

BAKE at 350 degrees for 1 hour
